Category: Product ID: 456

Description

Commune of origin: Castiglione Falletto. Grape variety: 100% Chardonnay. Annual production: 7.000 bottles. Vineyard area: 1 hectare.

Altitude: 320 metres. Soil profile: Clayey. Training method and vine density: Vertical Guyot, at 5.000 vines per hectare. Average age of

producing vineyards: 25 years. Yield per hectare: 90 quintals of grapes.

Fermentation and maturation: After pressing of the intact clusters, the free-run must from the first and second fractions remains in steel

tanks, at around 16°C to prevent fermentation, for 3-4 days of gravity settling with elimination of the deposit. A cultured-yeast fermentation

follows, from 18°C to 10°C to ensure optimal aroma extraction. The wine then matures 3-4 months in steel. Sensory description: In

appearance, a striking gold-tinged straw yellow, radiant and shimmering. A heady, generous bouquet, remarkably dense and complex, releases

a broad spectrum of aromatics, notably yellow peach, citrus, and tropic fruit, with enticing nuances of fresh-mown hay, dried flowers, and

acacia honey in the background. Running throughout is an intense minerally impression edged with gunflint. The palate has a rich, creamy,

almost buttery, texture, showcasing an abundance of juicy fruit and an appealing vein of dried almond. A judicious acidity and a subtle, but

constant thread of slaty mineraliness drive the progression and help create a finish that is lengthy, crisp, and delicious. Serving suggestions:

Serve cool, but not excessively cold. Ideal as an aperitif, as well as with cold antipasti, with first courses of pasta or risotto with fish or

vegetables, and even with more complex dishes featuring seafood or light meats.
