Commune of origin: San Marzano Oliveto. Grape Variety: 100% Moscato. First year of production: 2008. Annual production: 15.000
bottles. Vineyard area: 1.7 hectars. Altitude: 180 metres. Soil profile: clay-chalk. Training method: Arched Guyot. Average age of producing
vineyard: 35 years. Yield per hectare: 90 quintals. Vinification: The grapes are harvested and brought to the winery in 20 kg crates, in order
to keep the bunches intact, at which time they undergo a soft pressing. The free-run juice (obtained using a low atmosphere press) is cooled
to a temperature of 0 °C filtred, at which it remains until one month before bottling. At this point, a slow fermentation takes place until the wine
reaches 5% – 5,5% al vol. Sensory description: Aromatic and sparkling with a straw-yellow color of varied intensity depending on the vintage.
The musky perfume in the glass recalls the freshly harvested grapes. Serving suggestions: Served cold, this Moscato d’Asti is best paired
with panettone cake and other typical Christmas sweets, cookies, tarts and fruit-based desserts.
